10-546-123 NUTRITIONAL HEALTH ...this course provides fundamental knowledge of nutrition science and relates relevant concepts to chronic disease prevention methods and athletic/fitness performance strategies. Topics covered include: an overview of the macro- and micronutrients, digestion, absorption and elimination processes, weight management, chronic disease states, and sport-specific nutrition strategies. Students will examine dietary assessment and intervention strategies to provide a holistic approach to modern-day barriers of healthy nutrition.

  1. Evaluate the nutritional adequacy of food intake.
  2. Apply basic nutrition concepts and nutrition guidelines to personal life, food choices, and sport performance.
  3. Define the basic functions, food sources, and requirements of each of the three macronutrients.
  4. Explain the importance of nutrition as it relates to health promotion, disease prevention, and sport performance throughout the life cycle.
  5. Explain mechanisms of digestion, absorption, and energy metabolism.
  6. Evaluate factors to consider when making nutrition recommendations for athletes.
  7. Evaluate the impact ergogenic supplements and special diets have on over health and performance.
  8. Define the basic functions, common food sources, and recommended daily intakes (RDIs) of minerals .
  9. Explain the importance of hydration for athletes and non-athletes.
  10. Discuss key causes, behavioral indicators, physical symptoms, prevention methods, and intervention measures for eating disorders.
  11. Explain the three energy pathways (the phosphagenic cycle, aerobic, and anaerobic glycolysis) and their impact on nutrition and performance for athletes
  12. Describe body composition assessment methods and the effect that variations in composition have on overall health.
